Cinnamon almonds are extremely hard to stop munching on. They're often pricey to buy but making them at home will reduce the costs and isn't hard to do.

- 2 tablespoons caster/superfine sugar
- 2 tablespoons cinnamon
- Egg white (don't beat)
- Almonds, with skins on (as many as desired)

- Preheat the oven to 180ºC/350ºF. Prepare the baking tray/sheet by laying parchment paper over it.
- Wash the almonds and drain them.
- Place the sugar and cinnamon inside a paper bag.
- Coat the washed almonds with egg white. Use a basting or pastry brush.
- Add the egg-white coated almonds to the paper bag and given them a good shake.
- Arrange the coated almonds in a single layer on the baking tray/sheet.
- Place into the oven. Bake for 20-25 minutes.
- Remove from the oven. Allow to cool completely before transferring to an airtight container for storage.

- Cinnamon almonds are an excellent gift idea. Simply place into a cellophane bag and add a pretty ribbon at the top. Include a small label explaining the ingredients.
