How to Make Apple Cider and Cheddar Tartlets

This delicious dessert is a great recipe when you have plenty of apples to cook with. The combination of apples, cider and cheese is sure to win over fans of wholesome desserts. Great for both family and friends.

Recipe creates 12 tarts:



  • 2 teaspoons unsalted butter

  • 1/2 cup brown sugar, firmly packed, divided

  • 2 large Granny Smith apples, peeled, cored and finely diced

  • 1/2 teaspoon ground cinnamon, divided

  • 4 cups (1L) sweet apple cider

  • 2 teaspoons (10 mL) cider vinegar

  • 1/2 package (200 g) puff pastry, thawed but very cold

  • 1/4 cup shredded mild cheddar cheese

  • Small amount of flour (for rolling pastry)

  1. Preheat the oven to 400°F/200°C.





  2. Melt the unsalted butter in a large saucepan.





    • Add in 2 tablespoons of the brown sugar into the butter and stir until the butter is smooth. Add in the apple pieces and cook on medium-low heat until the apple pieces are slightly softened yet retain their shape. This should take approximately 6 minutes.

    • Stir 1/8 teaspoon of ground cinnamon into the apple mixture. Move the mixture to a small bowl and set aside.



  3. Using the same saucepan, mix together the apple cider, cider vinegar and the remaining brown sugar and ground cinnamon and heat on medium until the brown sugar dissolves.





    • Turn the heat down to low and let it simmer until the cider mixture is syrupy and reduced to about 3/4 cup. This should take approximately 25 minutes.



  4. Sprinkle some flour onto a smooth surface and roll out the puff pastry into a square.





    • Using a knife or pizza wheel, cut the pastry into 12 rectangular pieces by slicing 4 horizontal rows and 3 vertical rows.

    • Place the pastry pieces into a greased muffin tin. Be sure to grease both the bottoms and sides of a cup.

    • Use a fork to prick the bottoms of the pastry piece a few times.

    • Spoon cooked apple into the pastry cups.



  5. Bake for 15 minutes or until golden brown.





  6. When cool enough to handle, remove the tartlets from the tin and drizzle with the cider syrup mixture. Sprinkle with grated mild cheddar cheese.





  7. Serve hot or cold. Enjoy!
